Old Fashioned Pea Soup

2 cups (500 mL) 8 cups (2 L) 1/2 lb (.25 kg) 1 1/4 cup (75 mL) 1 1/4 tsp (1 mL) 1 tsp (5 mL) 1 |
dry whole peas (green or yellow) water side bacon, diced large onion, chopped fresh parsely, minced clove garlic savory salt bay leaf |
Sort and rinse peas. Combine peas and water in large heavy saucepan and bring to boil. Boil 2 minutes, cover and remove from heat. Let stand one hour. Add remainder of ingredients, return to boil and simmer until the peas are tender and the soup begins to appear creamy (approximately 2 - 3 hours). Remove bay leaf.
For a very creamy soup, cool slightly, puree in blender; return to boiling.
